Lentil, Barley and Cherry Salad

Ingredients

  • 1 cup dried French green lentils
  • 2 1/2 cups water
  • 2 cups cooked barley
  • 1/2 lb. fresh cherries, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup fresh basil leaves, chopped
  • 3 Tbsp. lemon juice
  • 2 tsp. honey
  • 1 tsp. mustard
  • 3/4 tsp. salt
  • 1/4 cup olive oil
  • 1/2 tsp salt and pinch of black pepper

Directions

  1. Combine lentils with water. Bring to a boil, reduce heat, cover and simmer until tender, about 25 minutes.
  2. Drain and rinse, toss with cooked barley, cherry halves, feta cheese and basil leaves. Whisk lemon juice, honey, mustard and salt. Whisk in olive oil and add dressing to barley mixture with 1/2 tsp. salt and pinch pepper.
