Lentil and Spinach Burritos

Serves 6 people

Ingredients

  • 1 cup dried black beluga lentils
  • 2 1/4 cups water
  • 2/3 cup medium salsa
  • 1/2 tsp. salt
  • 6 large flour tortillas
  • 1 1/2 cup shredded Mexican blend cheese
  • 2 cups brown or white rice, cooked and hot
  • 1 1/2 cup shredded baby spinach
  • salsa and sour cream to serve

Directions

  1. Bring lentils, water and salsa to a boil. Reduce heat and simmer until tender, 30 or 45 minutes. Drain; season with salt. Divide among tortillas and top each with 1/4 cup cheese, 1/3 cup rice and 1/2 cup spinach. Fold up and bake at 400 degrees for 15 minutes. Serve with salsa and sour cream.
