Lentil Burgers

Ingredients
- 1 cup dried brown lentils
- 4 cups salted water
- 3/4 cup plain bread crumbs
- 3 scallions, finely chopped
- 2 eggs, beaten
- 1/4 cup grated Parmesan cheese
- 1 tsp. garlic salt
- 1/2 tsp. pepper
- 1/4 cup sun-dried tomato pesto
- 2 Tbsp. mayonnaise
- 4 English muffins
- Sun-dried tomato mayonnaise and scallions, if desired.
Directions
- Boil lentils in salted water until tender, 30 to 45 minutes. Drain and mash lentils. Stir in bread crumbs, scallions, eggs, Parmesan cheese, garlic salt and pepper.
- shape into 4 patties and fry in oil for 8 minutes, flipping once. Blend tomato pesto and mayonnaise. Serve burgers open-faced on English muffins. top with sun-dried tomato mayonnaise and chopped scallions.
