Lentil Burgers

Serves 4 people

Ingredients

  • 1 cup dried brown lentils
  • 4 cups salted water
  • 3/4 cup plain bread crumbs
  • 3 scallions, finely chopped
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1/4 cup sun-dried tomato pesto
  • 2 Tbsp. mayonnaise
  • 4 English muffins
  • Sun-dried tomato mayonnaise and scallions, if desired.

Directions

  1. Boil lentils in salted water until tender, 30 to 45 minutes. Drain and mash lentils. Stir in bread crumbs, scallions, eggs, Parmesan cheese, garlic salt and pepper.
  2. shape into 4 patties and fry in oil for 8 minutes, flipping once. Blend tomato pesto and mayonnaise. Serve burgers open-faced on English muffins. top with sun-dried tomato mayonnaise and chopped scallions.
