Garlic-Chipotle Love

Ingredients

  • 1 cup canola oil
  • 12 cloves garlic, peeled
  • 3 Tbsp. chopped canned chipotle chiles in adobo
  • 1/4 cup chopped fresh cilantro
  • Grated zest of 1 lime
  • 1 tsp. salt

Directions

  1. Heat oven to 300 degrees.
  2. Pour oil into heavy ovenproof medium saucepan and add garlic. Cover with foil, place in oven and bake until garlic turns aa nutty brown and is really soft (think cream cheese), about 45 minutes.
  3. Remove saucepan from oven and let garlic and oil cool to room temperature.
  4. Put the garlic and oil in a blender. Add chipotles and adobo, cilantro, lime zest and salt and puree until very smooth.
  5. Store in the refrigerator in a tightly covered container for up to 2 weeks or freeze for up to 1 month.
  6. to use, spread on hamburger buns, or marinade chicken, pork or fish, or make a salad dressing with 1 Tbsp. Garlic-Chipotle Love, 1/4 cup olive oil and 2 Tbsp. freshly squeezed lime juice, whisked to combine.
