Ingredients
- 2 Tbsp. lemon juice
- 4 globe artichokes
- 1 1/2 cups plain bread crumbs
- 1 cup shredded Asiago cheese
- 1/2 cup parsley, chopped
- 1/3 cup extra-virgin olive oil
- 4 cloves garlic, minced
- 1 Tbsp. chopped thyme
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Directions
- Bring a pot of lightly salted water and lemon juice to a boil. Trim stems and cut off top third of artichokes. Add artichokes to pot and boil 25 minutes. Remove artichokes with a slotted spoon

and rinse upside under cold water. Turn upside down onto paper towels and let drain 5 minutes.
- Meanwhile, heat oven to 400 degrees. To prepare stuffing, combine all remaining ingredients.
- Place drained artichokes in a small baking dish. Divide stuffing evenly among artichokes, filling between leaves. Bakes 15 to 20 minutes,
