Gnocchi, Peas and Prosciutto

Ingredients
- 1 Tbsp. extra-virgin olive oil
- 3 oz. prosciutto, chopped
- 1 cup heavy cream
- 1/4 cup shredded Parmesan, plus more for serving
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 pkg. (17.5 oz.) gnocchi
- 1 1/2 cups shelled English peas
Directions
- Bring pot of lightly salted water to a boil.
- Heat oil in a large skillet over medium heat. Add prosciutto and cook 3 to 5 minutes, until crispy. Add heavy cream, bring to a simmer and cook 1 minute, until slightly thickened. Stir in Parmesan, salt and pepper.
- Add gnocchi and peas to water, cook 2 minutes. Drain and add to cream sauce. Return to a simmer and toss to coat. Sprinkle with more Parmesan.
