Sriracha-Glazed Shrimp with Snow Pea Salad

Ingredients

  • 1/2 lb. snow peas
  • 3 cups cooked white rice
  • 1/2 sweet red pepper, thinly sliced
  • 2 Tbsp. reduced-sodium soy sauce
  • 2 Tbsp. lime juice
  • 1 tsp. sesame oil
  • 24 peeled large shrimp
  • 3 Tbsp. honey
  • 1 Tbsp. Sriracha

Directions

  1. Cook snow peas in boiling water for 2 minutes. Drain. Combine snow peas, cooked rice, red pepper, soy sauce and lime juice and sesame oil. Refrigerate until serving. Double-skewer the shrimp using 8 presoaked wood picks.
  2. Combine honey and Sriracha. Brush over shrimp and broil 2 minutes; turn, brush with more honey mixture and broil 2 minutes. Serve with snow peas salad and additional soy sauce, if desired.
