Fire-Roasted Ratatouille with Linguine

Ingredients
- 2 small eggplants
- 2 medium zucchini
- 6 plum tomatoes, halved
- 1 red onion, cut in wedges
- 2 sweet red peppers cut in large strips
- 3 Tbsp. olive oil
- 13/4 tsp. salt
- 1/2 tsp. black pepper
- 1/2 lb. cooked spinach linguine
- 1 cup sliced basil
- 1/4 cup white balsamic vinegar
- 1 can (15 oz.) warm drained butter beans
- 1 Tbsp. olive oil
Directions
- Cut eggplants and zucchini into 1/4-inch planks. Brush vegetables with olive oil, season with salt and black pepper. Grill in 2 batches, 4 minutes per side.
- Coarsely chop veggies and stir into cooked spinach linguine. Add sliced basil, white balsamic vinegar and butter beans. Drizzle with olive oil.
