Honey Soy Salmon with Cumin-Infused Potatoes

Ingredients
- 2 Tbsp. reduced-sodium soy sauce
- 2 Tbsp. honey
- 2 cloves garlic, chopped
- 4 (5 oz.) salmon fillets
- 1 Tbsp. vegetable oil
- 3/4 tsp. cumin seeds
- 1 1/2 lb. Yukon gold potatoes, peeled, cut into 1/2-inch cubes
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup water
Directions
- In a shallow dish, combine soy sauce, honey, and garlic. Place salmon fillets, skin side up.
- In dish, in a large nonstick skillet, heat vegetable oil over medium-high heat., add cumin seeds and cook 1 minute.
- Stir in potatoes, cut into cubes, salt, black pepper and water. Cook 12 minutes, stirring frequently, until tender. Add place dish in oven. Roast at 450 degrees for 12 to 15 minutes, basting a few times, until fish is cooked through.
