Rotini with Sausage, Chard and Pine Nuts

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. turkey sausage
  • 3 cloves garlic, sliced
  • 1lb. rainbow chard, trimmed and sliced
  • 1/2 cup golden raisins
  • 1/4 cup toasted pine nuts
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1lb. rotini
  • 1/2 cup grated Parmesan

Directions

  1. Heat olive oil in a large nonstick skillet over medium-high heat; crumble in turkey sausage and garlic. Cook 5 minutes, stirring occasionally. Add chard and cook 3 minutes. Stir in raisins, pine nuts and salt and pepper.
  2. Meanwhile, cook rotini following pkg. directions. Drain and reserve 1 cup cooking water. Toss pasta with sausage mixture and enough reserved water to create a sauce. Stir in grated Parmesan.
