Chicken with White Beans and Rosemary

Ingredients
- 2 lb. skinless bone-in chicken thighs
- 1/4 tsp. salt
- pinch black pepper
- 1 Tbsp. olive oil
- 4 slices bacon, chopped
- 4 cloves garlic, chopped
- 1 sprig fresh rosemary
- 1 cup reduced-sodium chicken broth
- 2 cans (15.5 oz. each) white beans, drained
- 2 Tbsp. chopped parsley
Directions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken, cook 4 minutes per side. Place on a baking sheet; bake at 375 degrees for 20 minutes. Add bacon to skillet; cook 5 minutes, until crisp. Stir in garlic and rosemary sprig rosemary; cook 1 minute. Pour in chicken broth, white beans and parsley. Return chicken to skillet. Serve.
