Chicken with White Beans and Rosemary

Ingredients

  • 2 lb. skinless bone-in chicken thighs
  • 1/4 tsp. salt
  • pinch black pepper
  • 1 Tbsp. olive oil
  • 4 slices bacon, chopped
  • 4 cloves garlic, chopped
  • 1 sprig fresh rosemary
  • 1 cup reduced-sodium chicken broth
  • 2 cans (15.5 oz. each) white beans, drained
  • 2 Tbsp. chopped parsley

Directions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, cook 4 minutes per side. Place on a baking sheet; bake at 375 degrees for 20 minutes. Add bacon to skillet; cook 5 minutes, until crisp. Stir in garlic and rosemary sprig rosemary; cook 1 minute. Pour in chicken broth, white beans and parsley. Return chicken to skillet. Serve.
