Tomatillo Chicken tostadas

Ingredients
- 8 corn tortillas
- 1 Tbsp. canola oil
- 1 cup red onion, chopped
- 1 lb. ground chicken
- 1 1/2 cups tomatillo salsa
- 3/4 cup shredded taco cheese blend
- shredded lettuce
- chopped tomato
Directions
- Place corn tortillas on a large baking sheet and coat with nonstick cooking spray. Bake at 350 degrees for 15 minutes.
- meanwhile, heat canola oil in a large nonstick skillet over medium-high heat; add red onion and cook 3 minutes. Crumble in ground chicken; cook 5 minutes, until no longer pink. Stir in salsa; cook 2 minutes, until liquid evaporates. Top tortillas with chicken mixture, cheese blend, shredded lettuce and chopped tomato.
