Jeresy dinner Coleslaw

Ingredients

  • 1 head green cabbage, shredded (about 4 cups)
  • 1 cup shredded carrots
  • 1 shallot, thinly sliced
  • 1/2 cup thinly sliced celery
  • 3/4 cup distilled white vinegar
  • 1/2 cup canola oil
  • 1 1/2 Tbsp. sugar
  • 1 clove garlic, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tsp. kosher salt
  • 1/2 tsp freshly cracked black pepper

Directions

  1. In a large bowl, combine cabbage, carrots, shallot and celery. Set aside.
  2. In a medium bowl, whisk remaining ingredients.
  3. Add dressing to vegetables. toss and combine well, coating vegetables thoroughly.
  4. Allow slaw to develop flavor and wilt for at least 1 hour at room temperature before serving.
