Apple Waffles with Apple Rings and Bacon

Ingredients
- 4 medium apples, cored, peeled and sliced 1/2 inch thick
- light brown sugar
- Bacon strips for 4 servings
- 2 cups buttermilk baking mix
- 2 eggs
- 1 1/4 cups apple juice
- 1/4 cup butter or margarine, melted
Directions
- Preheat oven to 375 degrees.
- Arrange apple rings in single layer on roasting pan. Sprinkle lightly with brown sugar. Cover with broiler rack and put bacon strips on rack in single layer. Bake 15 to 20 minutes, or until bacon is crisp and apples are done; keep warm.
- Meanwhile, combine remaining ingredients, beat until smooth and bake waffles according to directions for your waffle iron. Serve at once, topped with apple rings (drained, if desire, on paper towels) and bacon.
