Applesauce Pancakes

Ingredients

  • 2 cups flour
  • 3 Tbsp. sugar
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 2 cups buttermilk
  • 2 eggs, slightly beaten
  • 2 Tbsp. melted butter
  • 2/3 cup finely chopped apples
  • Spiced Apple Syrup:
  • 2 apples
  • 1 cup apple cider
  • 3/4 cup brown sugar
  • 1 Tbsp. butter or margarine
  • 1/4 tsp. cinnamon

Directions

  1. Sift flour with sugar, soda and salt. Combine buttermilk, eggs and melted butter; add to dry ingredients. Stir just enough to mix. Fold in chopped apples. Bake on hot, lightly greased griddle or electric skillet until golden brown on both sides. Serve with syrup.

  3. Peel, core, and thinly slice apples. Ina a saucepan, combine apple cider, brown sugar, butter or margarine and cinnamon. Heat to boiling. Add apples; simmer about 10 minutes, or until apples are tender.
