Ingredients
- 1 pound thick asparagus, peeled and ends trimmed
- olive oil spray (if concerned about using olive oil for grilled veggies, use grapeseed oil or any vegetable oil)
- salt and pepper to taste
- For the Dijon Mustard Vinaigrette:
- 1 tbsp Dijon mustard
- 3 tbsp Bragg's Organic Apple Cider Vinegar
- 1 small shallot, chopped (or 1/2 small red onion, chopped)
- 4 tbsp olive oil
- salt and pepper to taste
- 1 tbsp fresh chopped parsley

For the asparagus:
- Preheat gas grill to 400 F (medium heat).
- Spray asparagus with olive oil (other oil of your choice), season with salt and pepper. Grill asparagus for 4-5 minutes, turning once until they are tender. Grilling time may vary, keep an eye on the grill.

For the Dijon mustard vinaigrette:
- Combine all ingredients in a small bowl (jar). Taste and adjust the taste if needed. If the vinaigrette is too tart, you cal always add a pinch of sugar to it.

To serve:
- Serve asparagus on a plate with the vinaigrette. Make soft boiled eggs to accompany the dish, if you’d like.
