Apple-Oat Bran Muffins

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • Pinch ground nutmeg
  • 1/4 cup oat bran
  • 1/2 cup shredded apple
  • 1/3 cup honey
  • 1/4 cup golden raisins
  • Juice and grated zest of 1 lemon
  • 2 large eggs
  • 2/3 cup buttermilk
  • 6 Tbsp. melted butter

Directions

  1. Preheat oven to 350 degrees. Lightly grease 12 muffin-pan cups, or use paper liners.
  2. In large bowl, sift together flour, baking soda, baking powder, cinnamon, salt and nutmeg; stir in oat bran.
  3. In medium-size bowl, mix together apple, honey, raisins, lemon juice, and zest.
  4. In small bowl, lightly beat eggs; beat in the buttermilk and melted butter. Add egg mixture to flour mixture and stir just until moistened. Fold in apple mixture just until blended. Spoon batter into muffin cups, filling each cup 2/3 full.
  5. Bake until tops are lightly browned and toothpick inserted in center comes out clean, 20 to 25 minutes. Cook 5 minutes; remove from muffin cups.
