Apricot Bread

Ingredients

  • 1 cup dried apricots
  • 1 cup sugar
  • 2 tsp. margarine
  • 1 egg
  • 1/4 cup water
  • 1/2 cup orange juice
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. soda
  • 1 tsp. salt
  • 1/2 cup nuts

Directions

  1. Soak the apricots in water until soft. Drain; cut into small pieces. Mix the sugar, margarine, and egg together. Stir in water and orange juice.
  2. Sift the dry ingredients together and add to the creamed mixture. Fold in apricots and nuts. Bake in a 350 degree oven for 50-60 minutes. One package of dried apricots will make a double recipe. This bread freezes well.
