Greek Style Mushrooms

Ingredients

  • 2 cups mushrooms
  • • 4 tablespoons lemon juice
  • • 1 tablespoon coriander
  • • 1 tablespoon parsley
  • • 1 dash paprika
  • • 1/2 tablespoon ground pepper
  • • 1 bay leaf

Directions

  1. Pour 1 cup of water in a pan.

  2. Add 1 tablespoon of lemon juice, bay leaf, coriander and pepper.

  3. Bring to a boil.

  4. Lower heat and simmer for 10 minutes.

  5. Clean and rinse the mushrooms.

  6. Cut them into thin slices.

  7. Add them to pan.

  8. Boil again for one minute.

  9. Remove from heat.

  10. Add parsley and paprika to mushrooms.

  11. Mix gently.

  12. Let cool.

  13. When serving, strain the mushroom mixture.

  14. Place them in a dish.

  15. Sprinkle with the remaining 3 tablespoons of lemon juice.
