almost Instant Cinnamon Roll Dough

Ingredients
- 1 cup water
- 1/4 cup granulated sugar
- 1/4 cup butter
- 1 egg plus 1 egg yolk
- 1 (16 oz.) pkg. hot roll mix
- 2/3 cup all-purpose flour
Directions
- In a 4-cup glass or plastic measure, combine the water, sugar, and butter. Microwave on high for 1 minutes, or until warm, but not hot. Whisk in egg and egg yolk, whisking until butter is melted and sugar has dissolved; set aside.
- In a large mixing bowl, combine the flour packet and the yeast packet from the hot roll mix, blending with a fork or whisk. Add the egg mixture, stirring until soft dough forms.
- Flour your hands and a flat work surface with a bit of the all-purpose flour. Transfer dough to floured surface and form into a ball. Adding as much flour as necessary, knead dough, pressing the dough into an oval, folding the oval in half, and pressing several times with the heel of your hand. Give the dough a quarter turn and repeat. Sprinkle the dough with just enough flour to keep it from becoming sticky. When the dough is smooth and springs back when you press it with a finger, you’ve kneaded enough, about 4 minutes.
- Return dough to bowl and rest 15 minutes. Proceed with desired recipe.
