Angel Hair Pasta with No-cook Tomato Sauce

Ingredients
- 8 oz. angel hair pasta or thin spaghetti
- 2 1/2 lb. tomatoes, coarsely chopped (6 cups)
- 1 small onion, quartered
- 1 cup lightly packed fresh basil leaves
- 1/4 cup extra-virgin olive oil
- 2 medium garlic cloves, coarsely chopped
- 1 tsp. fine sea salt
- 1/2 tsp. black pepper
- Dash crushed red pepper
- 1/4 cup freshly grated Parmesan cheese
- 2 Tbsp. chopped Italian parsley
Directions
- Cook pasta according to package directions, reserving 1/2 cup of the pasta cooking water.
- Meanwhile, combiner tomatoes, onion, basil, oil, garlic, black pepper and crushed red pepper in large bowl. Pulse in batches, using food processor, until coarse puree forms. Pour into large bowl; toss with pasta, adding reserved pasta water if necessary. Sprinkle with cheese and parsley; toss to coat.
