Angel Hair pasta with Plum Tomatoes and Fresh Basil

Ingredients
- 6 oz. angel hair pasta
- 1 Tbsp. extra-virgin olive oil
- 1 clove garlic, crushed
- 6 plum tomatoes, peeled, seeded and chopped
- 1/2 cup minced fresh basil
- 1/2 tsp. salt
- Fresh ground pepper to taste
- 2 tsp. balsamic vinegar
- 1 1/2 oz. Parmesan cheese, shaved
Directions
- Cook the pasta according to package directions. Drain and set aside: keep warm.
- In a large nonstick skillet, heat the oil. Add the garlic and saute until fragrant, about 30 seconds. Add the tomatoes and cook, stirring as needed, until softened, about 5 minutes. Stir in the basil, salt, and pepper; cook until the tomatoes are very soft, about 5 minutes. Pour over the pasta and toss with the vinegar. Serve, topped with the Parmesan.
