Arizona Pasta with Chicken, Lime, and Cilantro

Ingredients
- 2 Tbsp. butter or olive oil
- 1 to 2 cloves garlic, minced
- 2 small summer squash, such as zucchini, crookneck, or pattypan, trimmed and julienned
- 1 cup heavy cream
- 1 large red bell pepper, roasted, peeled, seeded and julienned
- 2 Tbsp. fresh lime juice
- 1 tsp. minced lime zest
- 1/2 cup chopped cilantro leaves
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3/4 lb. boneless, skinless chicken breast, cooked (preferably grilled) and cut into 1/4-inch wide strips
- 3/4 lb. fettuccine or linguine, cooked, drained, and set side in a warm place
- 1/2 cup grated Parmesan or Asiago cheese
Directions
- Heat the butter in a large skillet. Add the garlic and squash and cook over medium heat until slightly softened, about 3 minutes.
- Add the cream and bring to a boil. Stir in the bell pepper, lime juice, lime zest, cilantro, salt, pepper, and chicken. Continue cooking until heated through, about 1 minute. Add the pasta, toss to mix, and serve right away, accompanied by the Parmesan cheese on the side.
