Ingredients
- 6 oz. spaghetti
- 5 T. butter
- 1/3 c. parmesan
- 1 egg, beaten
- 1 c. chopped celery
- 1/2 onion, chopped
- 1/3 c. chopped bell pepper
- 2 garlic cloves, finely diced
- 1 can. chopped tomatoes
- 1 can. tomato paste
- 1 t. basil
- 1 t. oregano
- salt
- pepper
- 1 3/4 c. zucchini, sliced
- 1 c. cottage cheese
- 3/4 c.+ mozzarella cheese, grated
Directions

Cook spaghetti and drain. Combine with 2 T. butter and stir until it melts, then still in parmesan and egg. Put in bottom of pan.

Melt the rest of the butter in a skillet and cook onion, garlic, celery and pepper. Stir in tomatoes and liquid and add tomato paste and spices.

Bring to a boil and simmer 15 minutes. Stir in zucchini and simmer until cooked, another five minutes or so.

Spread cottage cheese over spaghetti and then add veggies and mozzarella.

Cook at 350 about 30 minutes.
