Ingredients
- 4 one-inch-thick loin pork chops (about 2 1/2 lb.)
- 1 Tbsp. vegetable1 tsp. salt
- 1/4 tsp. pepper
- 1medium-size green pepper, seeded and cut into rings
- 1 large onion, sliced and separated into rings
- 1 1/2 cups bottled barbecue sauce
Directions
- Trim as much fat as possible from edges of pork chops. Heat vegetable oil in large skillet. Brown chops on both sides.
- Transfer chops to shallow baking dish; sprinkle with salt and pepper. Top with green pepper and onion rings. Pour barbecue sauce over chops; cover.
- Bake in moderate oven (350 degrees) for 1 hour, or until chops are tender.
