Abner’s Barbecues Pork Chops

Ingredients

  • 4 one-inch-thick loin pork chops (about 2 1/2 lb.)
  • 1 Tbsp. vegetable1 tsp. salt
  • 1/4 tsp. pepper
  • 1medium-size green pepper, seeded and cut into rings
  • 1 large onion, sliced and separated into rings
  • 1 1/2 cups bottled barbecue sauce

Directions

  1. Trim as much fat as possible from edges of pork chops. Heat vegetable oil in large skillet. Brown chops on both sides.
  2. Transfer chops to shallow baking dish; sprinkle with salt and pepper. Top with green pepper and onion rings. Pour barbecue sauce over chops; cover.
  3. Bake in moderate oven (350 degrees) for 1 hour, or until chops are tender.
