Black-Eyed Pea Salad

Ingredients

  • 1 yellow bell pepper, cored and diced
  • 1 red bell pepper, cored and diced
  • 1 cup diced red onion
  • 2 jalapeno peppers, seeded and chopped
  • 4 (15 oz.) cans black-eyed peas, drained and rinsed
  • 1 clove garlic, minced
  • 1/2 cup red or white wine vinegar
  • 2 Tbsp. balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 tsp. cumin seed
  • 1 Tbsp. dried parsley
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 4 slices bacon,, cooked crisp

Directions

  1. Combine all ingredients, except bacon, in a large bowl and mix well. Cover and chill 4 to 12 hours. Crumble and add bacon just before serving.
