Ingredients
- 3/4 cup butter-flavor vegetable shortening
- 1 1/4 cup firm-packed
- light brown sugar
- 1 egg
- 1 Tbsp. milk
- 1/2 cup grated apple
- 1 1/2 tsp. vanilla
- 3 cups quick oats, uncooked
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1 cup chopped dried apples
- 1 cup coarsely chopped pecans
Directions
- Heat oven to 375 degrees. Grease baking sheets with shortening. Combine shortening, brown sugar, egg, milk, grated apple and vanilla in a large bowl. Beat at medium speed with electric mixer, until well blended. Combine oats, flour, baking soda, salt and cinnamon. Mix into creamed mixture at low speed, just until blended. Stir in dried apples and nuts. Drop dough by rounded measuring tablespoons 2 inches apart on baking sheet. Bake one sheet at a time 10-12 minutes, or until lightly browned. Do not overbake. Cool 2 minutes on baking sheet. Cool completely on foil.
