Stir Fried Green Beans with Pork

Ingredients

  • 10 oz green beans, cut into 2-inch pieces
  • 7 oz ground pork
  • 2 scallion stems, finely sliced
  • 1 tsp ginger, minced
  • 2 tbsp vegetable oil
  • Sauce:
  • 1 tbsp soy sauce
  • 1 tbsp sake
  • 1 tsp sugar
  • 1 tsp chilli bean sauce

Directions

  1. Combine the sauce ingredients in a small bowl.

  2. Rinse green beans, shake off water but do not completely dry. Wrap in cling wrap and place in microwave for 1 minute, then remove from microwave and unwrap. The beans should be just cooked, still crisp.

  3. Add oil to wok, stir fry scallions and ginger for 20 seconds or until fragrant, but before ginger starts to burn.

  4. Add pork and stir fry, breaking apart.

  5. When pork is almost cooked through, add the beans and sauce ingredients. Stir fry until pork is cooked through and the sauce is evenly distributed throughout.

  6. Serve with rice.
