After-Christmas Gumbo

Ingredients

  • Leftover turkey carcass
  • 1 gallon water
  • 1/4 cup flour
  • 1/2 cup bacon or ham drippings
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 1 small can tomatoes
  • 1/2 can tomato paste
  • 1 lb. frozen cut okra
  • 1/2 clove garlic
  • 1/2 to 1 lb. ham, chopped
  • salt, pepper and cayenne to taste
  • 1 can crabmeat or shrimp
  • 1 1/2 Tbsp. file powder

Directions

  1. Place turkey carcass and water in a large vessel. Cover and boil until all meat falls from the bones. Brown flour slightly in bacon drippings. Add onion and brown slightly. Add celery, tomatoes, tomato paste, okra, garlic, ham and seasoning. Pour into pot with turkey. Simmer for 1 hour. Add crab meat or shrimp; cook slowly for 2 hours. Add file powder just before serving over fluffy cooked rice. Never freeze or store after file has been added.
