Agnello in Umido con Cucuzza (Lamb Stew with Squash)

Ingredients

  • 2 lb. lean stewing lamb
  • 4 Tbsp. olive oil
  • 1 1/2 lb. cucussa (light green Italian squash)
  • 1 tsp. oregano
  • 2 large ripe tomatoes
  • 1 large onion, sliced
  • salt and pepper to taste

Directions

  1. Wash and scrape squash; cut into 1 inch cubes. Dip tomatoes in boiling water 1 minute; peel. Have lamb cut in serving pieces. Pour oil in large saucepan; heat. Add onion; cook about 3 minutes. or until soft. Add lamb; cook about 15 minutes or until brown on all sides. Add tomatoes (cut into small pieces). Add oregano, salt and pepper to taste; cover; simmer 20 minutes. Add squash 10 minutes longer or until squash is tender. Serve very hot.
