Aioli

A strongly flavored garlic mayonnaise which originated in the Provence region of southern France and is often served with meats, vegetables or seafood

Ingredients

  • 1/2 cup olive oil
  • 5 cloves garlic, pressed or minced
  • 1 cup mayonnaise
  • 1/2 Tbsp. Dijon-style mustard
  • 1/8 tsp. salt, or taste
  • 1/8 tsp. white pepper
  • juice of 1 lemon

Directions

  1. In a blender or food processor, mix oil and garlic until blended.
  2. In a small bowl, combine mayonnaise, mustard, salt, and pepper. Pour in oil mixture, whisking until smooth.
  3. Add lemon juice if needed, a little at a time, whisking after each addition. Finished sauce should be thick and creamy.
  4. Serve with cooked seafood, raw vegetables or bread.
