Aioli

A strongly flavored garlic mayonnaise which originated in the Provence region of southern France and is often served with meats, vegetables or seafood

Ingredients
- 1/2 cup olive oil
- 5 cloves garlic, pressed or minced
- 1 cup mayonnaise
- 1/2 Tbsp. Dijon-style mustard
- 1/8 tsp. salt, or taste
- 1/8 tsp. white pepper
- juice of 1 lemon
Directions
- In a blender or food processor, mix oil and garlic until blended.
- In a small bowl, combine mayonnaise, mustard, salt, and pepper. Pour in oil mixture, whisking until smooth.
- Add lemon juice if needed, a little at a time, whisking after each addition. Finished sauce should be thick and creamy.
- Serve with cooked seafood, raw vegetables or bread.
