Aioli (No Mayonnaise)

Ingredients

  • 6 medium garlic cloves, peeled
  • 1 cup extra-virgin olive oil
  • 1 large egg
  • 1 tsp. fresh lemon juice
  • Pinch salt

Directions

  1. In a small skillet over low heat, cook the garlic cloves with 1 tsp. of the oil until the garlic is golden on all sides. Remove from heat and cool.
  2. Place the egg, lemon juice, salt and 1 Tbsp. of the oil in a blender or in a food processor with the chopping blade attached. Process until blended. With the motor running, drop the garlic into the machine, then add the remaining oil in a thin, steady stream. Continue processing until thickened. Spoon into a small bowl. Cover and refrigerate 2 hours before serving.
