Aioli Sauce

Ingredients

  • 1 medium potato, peeled and diced
  • 1 egg yolk
  • 1 Tbsp. minced garlic
  • 1 cup olive oil
  • 2 Tbsp. water
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • 2 tsp. horseradish, optional

Directions

  1. Boil potato for 20 minutes. Drain. Add to a food processor with egg yolk, and garlic. Pulse to combine.
  2. Combine olive oil, water and lemon juice. With machine running gradually add potato mixture. Season with the salt and white pepper. To jazz up the taste, add the horseradish if desired. Serve at room temperature over poached salmon or trout.
