Elote Dog

Ingredients

  • 4 hot dogs
  • Mayo
  • Charred Corn Salsa:
  • 2 husked ears of corn
  • 2 oz crumbled queso fresco
  • 1/4 cup finely chopped red onion
  • 2 tsp olive oil
  • 1 tsp lime zest
  • salt and pepper
  • Raw tomatillo wedges
  • Tajin Clasico seasoning

Directions

  1. Charred Corn Salsa:

  2. Prepare a gill for medium-high heat. Grill corn, turning occasionally, until lightly charred, 5-8 minutes. Let cool.

  3. Cut kernels off cobs; toss with queso fresco, chopped red onion, olive oil and lime zest; season with salt and pepper.
