- 4 hot dogs
- Mayo
- Charred Corn Salsa:
- 2 husked ears of corn
- 2 oz crumbled queso fresco
- 1/4 cup finely chopped red onion
- 2 tsp olive oil
- 1 tsp lime zest
- salt and pepper
- Raw tomatillo wedges
- Tajin Clasico seasoning

Charred Corn Salsa:

Prepare a gill for medium-high heat. Grill corn, turning occasionally, until lightly charred, 5-8 minutes. Let cool.

Cut kernels off cobs; toss with queso fresco, chopped red onion, olive oil and lime zest; season with salt and pepper.
