Steamed Flounder with Fresh Tomatoes and Peppers

Ingredients
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 2 1/2 cups chopped orange or yellow or red bell peppers
- 1 1/2 cups chopped fresh tomatoes
- 1/4 cup slivered pitted Kalamata olives
- 2 tbsp. capers
- 3 Tbsp. chopped fresh flatleaf parsley
- 4 flounder filets (or other thin mild-flavored fish such as tilapia, or sole), about 1 1/2 lb.
- 1/2 tsp. coarse salt
- 1/8 tsp. black pepper
Directions
- heat oil in a large skillet on low. Add onion; cook and stir about 6 minutes or until softened. Add peppers and tomatoes and mix well; cover and simmer 10 minutes or until the tomatoes release their juices. Add olive, capers and parsley; mix well. Arrange flounder on vegetables and spoon juices on top; sprinkle with salt and pepper. Cover and simmer 5 minutes or until fish is cooked through.
