Alaska Dungeness Crab and Jicama Slaw with Charred Chillies

Ingredients
- Vinaigrette:
- 1/4 cup lime juice
- 1/3 cup olive oil
- 1/4 cup chopped cilantro
- 1/2 cup red onion slivers
- 4 cups julienne-cut jicama
- 1 each small grilled Anaheim chile, poblano chile, and red bell pepper, cut in strips
- salt to taste
- 12 oz. Alaska Dungeness crabmeat
Directions
- Prepare vinaigrette: Blend lime juice, olive oil and cilantro; set aside.
- Fold together onions, jicama, peppers and vinaigrette. Adjust seasoning with salt. Gently fold in Alaska Dungeness crabmeat before serving.
