Alaska Dungeness Crab and Jicama Slaw with Charred Chillies

Ingredients

  • Vinaigrette:
  • 1/4 cup lime juice
  • 1/3 cup olive oil
  • 1/4 cup chopped cilantro
  • 1/2 cup red onion slivers
  • 4 cups julienne-cut jicama
  • 1 each small grilled Anaheim chile, poblano chile, and red bell pepper, cut in strips
  • salt to taste
  • 12 oz. Alaska Dungeness crabmeat

Directions

  1. Prepare vinaigrette: Blend lime juice, olive oil and cilantro; set aside.
  2. Fold together onions, jicama, peppers and vinaigrette. Adjust seasoning with salt. Gently fold in Alaska Dungeness crabmeat before serving.
