Alaska Pollock with Garlic, Tomatoes and Rosemary

Ingredients

  • 1 cup sliced red onion
  • 25 cherry tomatoes
  • 1 cup roasted garlic cloves
  • 4 Alaska Pollock fillets (6 to 8 oz. each), fresh or thawed
  • 2 Tbsp. olive oil
  • 1 Tbsp. finely-chopped rosemary
  • Salt and pepper, to taste

Directions

  1. Heat oven to 400 degrees. Arrange onions, tomatoes and garlic in baking dish. Nestle Alaska
  2. Pollock fillets into vegetables. Brush fillets with olive oil; season with rosemary, salt and pepper. Roast about 8 to 10 minutes; adjust cook time for smaller fillets if necessary. Cook just until fish is opaque throughout.
