Alaska Pollock with Garlic, Tomatoes and Rosemary

Ingredients
- 1 cup sliced red onion
- 25 cherry tomatoes
- 1 cup roasted garlic cloves
- 4 Alaska Pollock fillets (6 to 8 oz. each), fresh or thawed
- 2 Tbsp. olive oil
- 1 Tbsp. finely-chopped rosemary
- Salt and pepper, to taste

Pollock fillets into vegetables. Brush fillets with olive oil; season with rosemary, salt and pepper. Roast about 8 to 10 minutes; adjust cook time for smaller fillets if necessary. Cook just until fish is opaque throughout.
