Alaska Salmon Burger

Ingredients

  • 1 can (14.75 oz.) Alaska salmon
  • 1/2 cup chopped onion
  • 1/2 cup finely chopped green pepper
  • 1/2 cup whole wheat bread crumbs
  • 1 egg
  • 1 Tbsp. lemon juice
  • 1 tsp. grated lemon peel
  • 1/2 tsp. rosemary, crushed
  • 1/8 tsp. pepper
  • Vegetable oil
  • Choice of toppings-sliced tomatoes, pickles, onions, cheese, mustard, catsup, mayonnaise, dressing, etc.

Directions

  1. Drain and flake salmon, reserving 2 Tbsp. of liquid. Combine salmon, onion, green pepper, bread crumbs, egg, reserved liquid, lemon juice, lemon peel, and seasonings; mix well.
  2. Form into four or five patties. Pan-fry in lightly oiled skillet for about 5 minutes or until browned; turn halfway through cooking time.
