All-Apple Sauce

Ingredients

  • 6 reed-skinned all-purpose apples
  • 3 x 1 inch piece orange or lemon rind
  • 1 cup sugar
  • Cream (optional)

Directions

  1. Wash apples, core and peel. Put peelings and orange rind in blender with 1 cup water. Whirl until finely grated. Cut apples in eighths and put in saucepan with the sugar. Add grated peelings and 1/2 cup water. Bring to boil, stirring occasionally, about 40 minutes. Serve slightly warm with cream or serve asd topping for puddings, waffles or pancakes.
