All-Fruit Mincemeat

Ingredients

  • 4 cups chopped, unpeeled apples
  • 2 cups chopped raisins
  • 1 cup snipped, dried apricots
  • 1 (6 oz.) can frozen apple juice concentrate
  • 3/4 cup water
  • 1/4 cup honey
  • 1 tsp. allspice
  • 1/2 tsp. salt
  • Brandy to taste

Directions

  1. In a large pot, stir all ingredients together except brandy and bring to boiling. Reduce heat, cover and simmer 50 minutes, stirring occasionally.
  2. Uncover, simmer 10 to 15 minutes more or until liquid has almost evaporated, stirring occasionally. Stir in brandy to taste. Cover and chill up to 1 month.
