All-Spiced-Up Raspberry and Mushroom Salad

Ingredients

  • 2 Tbsp. raspberry vinegar
  • 1 Tbsp. olive oil
  • 1 Tbsp. red jalapeno pepper jelly
  • 1/4 tsp. ground allspice
  • 1 lb. small fresh mushrooms, halved
  • 1 Tbsp. olive oil
  • 4 cups spring mix salad greens
  • 1 cup fresh raspberries
  • 2 Tbsp. chopped red onion
  • 2 Tbsp. fresh mint, minced
  • 2 Tbsp. toasted sliced almonds
  • 1/4 cup crumbled goat cheese

Directions

  1. Whisk together vinegar, olive oil, jelly and allspice.
  2. In a large skillet, cook and stir mushrooms in olive oil over medium-high heat until tender; cool slightly.
  3. In a large bowl, combine salad greens, fresh raspberries and red onion, mint and almonds. Add mushrooms and vinaigrette; toss to combine. Sprinkle with cheese.
