Almanzo’s Favorite Swiss Steak

Ingredients
- 1/2 cup flour
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- 2 to 3 lbs. round steak, 1 1/2 inches thick
- 2 Tbsp. butter
- 2 Tbsp. oil
- 2 cloves garlic, chopped
- 1 can condensed cream of mushroom soup, diluted with 2 cans milk or water
Directions
- Combine flour and seasonings. Pound the flour into both sides of the steak and let stand for 1/2 hour.
- Beat butter and oil in large skillet. Brown steak on both sides. Add garlic and cook for 1 minute.
- Add soup and simmer for 1 to 2 hours, until meat is tender. Cooking time will depend upon the thickness and tenderness of the meat.
