All-American Meatballs

Ingredients

  • 1 lb. lean ground beef
  • 1 medium potato, peeled and coarsely grated
  • 2 Tbsp. dried onion soup mix
  • 1 Tbsp. dried parsley flakes
  • 1 egg, beaten
  • 2 cups beef broth
  • 1 Tbsp. Worcestershire sauce
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water

Directions

  1. Combine ground beef, potato, onion soup mix, parsley flakes, and egg in large bowl. Shape into 12 (1 1/2 inch meatballs, set aside
  2. In a 2-quart microwavable casserole, mix beef broth and Worcestershire. Add meatballs. Cook covered, on medium 10 minutes. Combine cornstarch and water in small bowl until smooth, stir into meatballs and cover. Cook on medium 3 to 4 minutes, or until sauce is thickened (200 degrees if using probe.) Let stand, covered, 5 minutes before serving.
