Almond Cookies

Ingredients

  • 1 cup sugar
  • 1 1/3 cups shortening
  • 1 egg
  • 1 tsp. almond extract
  • 3 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 48 blanched whole almonds

Directions

  1. Preheat oven to 350 degrees.
  2. Cream butter and shortening until fluffy. Add egg and almond extract; beat 1 minute.
  3. Sift flour, baking soda and salt together; add to creamed mixture gradually, beating constantly. Roll dough into 1-inch balls; place 1-inch apart on greased baking sheet. Press center of each ball down gently; fill depression with 1 almond. Bake 20 minutes. Remove to wire
  4. rack and cool.

  5. makes about 4 dozen

  6. Variation: Grind almonds until fine, then add them to the dough mixture with the egg, flavoring and salt. Then add flour, a small amount at a time. Blend thoroughly.

  7. Drop from teaspoon onto greased baking sheet and bake at 375 degrees about 15 minutes.
  8. makes 45 cookies.
