Almond Custard Betty

Ingredients

  • 5 slices day-old bread
  • 1/2 cup almond paste
  • 1 1/2 cups grated Monterey Jack or Muenster cheese
  • 3 cups milk
  • 3 eggs
  • 1/4 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. grated orange rind
  • 2 Tbsp. brown sugar
  • 1/4 tsp. cinnamon

Directions

  1. Cut bread into 1-inch cubes, to yield about 3 cups. rumble almond paste and mix with grated cheese. Layer bread cubes alternately with almond paste mixture in 11 × 7-inch baking pan.
  2. Heat milk to scalding. Beat eggs lightly with sugar, salt and orange rind; gradually stir in hot milk.
  3. For a crumbly topping, mix well butter, brown sugar and cinnamon.
  4. Pour milk mixture over layered ingredients in pan; top with crumbly mixture. Set into a larger pan, add 1-inch hot water to larger pan and bake at 350 degrees 35 to 45 minutes or until custard is set.
