Almond Cherry Cheesecake

Ingredients

  • Crust:
  • 2/3 cup graham cracker crumbs (about 14 squares)
  • 1/4 cup butter or margarine, melted
  • 1/2 cup slivered almonds, broken
  • 1/4 cup sugar
  • Filling:
  • 8 oz. cream cheese, softened
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup cherries
  • Topping:
  • 1 pint sour cream
  • 5 Tbsp. sugar
  • 1/2 tsp. almond extract
  • slivered almonds for garnish, optional
  • Maraschino cherries, for garnish, optional

Directions

  1. Mix crust ingredients and press onto bottom and sides of 9-inch pie pan.
  2. Beat cream cheese and sugar until fluffy. Mix in eggs until creamy and smooth. Stir in cherries.
  3. Pour cream cheese mixture into crust. Bake at 375 degrees for 20 minutes.
  4. Let pie cool for 10 minutes.
  5. Mix topping ingredients, except almonds. Pour over pie.
  6. Bake pie at 375 degrees for 5 minutes. Top or garnish with slivered almonds, if used.
  7. Cool pie 8 hours or overnight before serving.
  8. Garnish with cherries.
