Ingredients
- 1 green pepper
- 1 red pepper
- 1 cup sweet corn
- 3 or 44 nopales (cactus pads), cleaned and diced
- 2 Tbsp. butter
- 1 purple onion, thinly sliced
Directions
- Clean peppers (include a hot banana pepper if you dare) and cook in butter until just limp. Add corn and nopales and simmer about 5 minutes. Serve garnished with onion rings. Aside of corn bread is yummy.
