Natural Date-and-Almond Energy Balls

Ingredients

  • 10 oz. dates, pits removed
  • 1 Tbsp. coconut oil
  • 1/4 tsp. ground cinnamon
  • 1 Tbsp. unsweetened shredded coconut
  • 2 oz. finely chopped almonds, plus more for coating

Directions

  1. Put the pitted date4s into a food processor along with coconut oil, cinnamon and coconut. Pulse to finely chop.
  2. Transfer the mixture to a large bowl; add the chopped almonds and knead into dough. If it’s a bit sticky, rub a teaspoon of coconut oil onto your hands.
  3. Once kneaded, pinch off a piece the size of a marshmallow and roll into a ball between your palms and then roll around in the ground almonds to coat.
  4. Store in an airtight container for up to one month.
  5. makes about 20 balls
