Crispy Pork Tenderloin Sandwiches

Ingredients

  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 large egg, lightly beaten
  • 1/2 cup seasoned bread crumbs
  • 3 tbsp Panko
  • 1/2 lb pork tenderloin
  • 2 tbsp canola oil
  • 4 kaiser rolls
  • Optional toppings: lettuce, tomato, pickles and mayo

Directions

  1. In a shallow bowl, mix flour, salt, pepper. In two other shallow bowls, place egg and mixed breadcrumbs.

  2. Cut pork into four slices; pound each to 1/4 inch thick. Dip each side in flour; shake off excess. Dip in egg, then in crumbs; pat to help adhere.

  3. In a skillet, heat oil over medium heat. Cook pork 2-3 minutes per side. Serve on buns. Add toppings if desired.
