Ingredients
- 2 cups oat flour
- 1/3 cup brown sugar, packed
- 1/3 cup baking cocoa
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup dark chocolate chips
- 2/3 cup zucchini, finely grated
- 1 cup non-fat milk
- 1/3 cup honey
- 2 egg whites, beaten

In a bowl, combine flour, brown sugar, baking cocoa, baking powder, baking soda and salt. Mix well; gently stir in chocolate chips. In a separate large bowl, combine remaining ingredients; mix well. Add flour mixture to zucchini mixture; stir only until well combined.

Spoon batter into muffin cups sprayed with non-stick vegetable spray, filling cups 2/3 full. Bake at 400 degrees for 18-20 minutes, until a toothpick tests clean. Cool muffin tin on a wire rack for 10 minutes; remove muffins from tin.
